Apple Cinnamon Quinoa Breakfast Bowl

This is my favorite way to eat quinoa! In a warm and cozy bowl with sweet apples and cinnamon and topped with crunchy nuts, cacao nibs, and a drizzle of almond butter. It is filling, sustaining, nutrient dense, and delicious!
Apple Cinnamon Quinoa Bowl
Makes 1 Serving
Ingredients:
1/2 cup water
1/4 cup quinoa (I like this brand because it is pre-rinsed and organic)
1 small apple, diced
maple syrup to taste (I use 1 teaspoon)
1/2 tsp vanilla extract
few shakes of cinnamon
pinch of salt
Mix-Ins/Toppings:
Directions:
Add water to a small pot and bring to a simmer. Stir in quinoa, apple, maple syrup, vanilla, cinnamon, and salt.
Return to simmer, cover, and cook on low heat for 10 minutes.
Remove from heat after 10 minutes and rest for 5 more minutes with the lid on.
Transfer to a bowl and add desired mix-ins and toppings!
